Established in 2020, by husband and wife team Chet & Nancy Saign, Hunt & Gather Restaurant offers a refined yet grounded dining experience in the heart of Capitol Reef Country, located at the west end of Torrey. Framed by vibrant herb and flower gardens and set beneath the red bluffs of the Velvet Ridge, the setting is quietly spectacular.

Inside, the dining rooms feature artwork honoring the region’s exploratory past, with tributes to John C. Frémont, John Wesley Powell, and Jim Bridger. Heated patios extend the dining room outdoors, where panoramic views and open desert skies complement an evening that feels both elevated and deeply rooted in its surroundings.

Chef Chet’s seasonally evolving menu reflects a hunter-gatherer sensibility, highlighting wild game, regional produce, and locally sourced bison. Local asparagus and seared antelope often begin the meal, while guest favorites such as elk chimichurri and the Three Sisters vegetable bake showcase a balance of bold flavor and careful technique.
